This Extra Virgin Olive Oil is presented in a bottle whose shapes and dimensions are identical to an emerald. This product of the Picual variety shows an aroma mainly of fresh grass and tomato plants, reminiscent of the extensive olive groves of the Guadalquivir basin.

Premium is made from Picual variety olives, giving rise to the characteristic Picual Jaén oil, the place where it comes from. During the first six nights of harvest, the olives destined for this Premium edition are harvested and crushed. The fruit is harvested with the utmost care, through an arduous selection process. From the moment the fruit begins to ripen, a multitude of tests are carried out in the different areas of the estate to determine the ideal area and time for harvesting. Harvesting takes place during the first half of October and, due to the fact that this month records daytime temperatures of around 30ºC, the fruit is harvested during the night to ensure that the temperature for harvesting and subsequent milling is below 20ºC.

The harvested olives go through a destemming process, at which time those that do not meet the requirements established for the production of this oil are discarded.

This oil has been awarded the Gold Medal at the Los Angeles International Olive Oil and the Gold Medal at the New York Competition International Olive Oil, both in 2013.
