Raw sheep's milk. 100% natural artisan cheese made from raw sheep's milk and vegetable thistle rennet. Aged for 45 days. Finca Pascualete is an estate dating back to the 12th century. Owned by the Countess of Romanones, it has a select flock of sheep. The Pascualete mini retort is sold in the most select shops in the world.

It has a vegetal and fermentation smell. In the mouth it is fatty and very creamy, it melts on the palate. Notes of clean wool and a very subtle sour aftertaste due to the vegetable rennet. It has a very creamy, almost liquid texture, the result of continuous daily turning, which melts deliciously on the palate. It is eaten with a spoon, opening the top of the cheese, or spreading it on toasted bread, although it also has many culinary uses.
