Raw goat's milk. Ibores is a semi-cured raw goat's milk cheese spread with smoked Pimentón de la Vera paprika, which contrasts with its ivory-colored interior. This semi-cured cheese is cured for a minimum of two months and is produced from the milk of Serrana, Verata or Retinta goats, all of which are fed according to tradition and allowed to roam the arid countryside in search of aromatic herbs and pastures.
The addition of Pimentón de la Vera paprika, from peppers grown in the area, complements the aroma of rockrose, heather and thyme, from the goats' feed. Walking the fine line between moist and dry, Ibores has a unique texture for a raw goat's milk cheese. Its paste has a nice fruity bite balanced with a mellow nuttiness and earthy flavor from the terroir of the region. Slightly spicy and salty but at the same time buttery, slightly goaty in the aftertaste, and very pleasant on the palate. Perfect for mixing with salads, breads or red wine.
