Pasteurised cow's milk. The Galician cheese par excellence. Cheese made with milk from cows of the Galician breeds. It is ripened in a cool, damp environment typical of Galicia and lasts between 10 and 20 days. Soft paste with few holes. Thin rind. It has a slightly sweet and slightly salty flavour. Predominantly lactic aromas of fermentation (yoghurt), spicy (vanilla) and a buttery aftertaste with a certain acidic and refreshing touch. Mild, lactic and slightly acidic aroma with hints of melted butter.

Pairing: White wines. Accompaniment: Lightly toasted nuts, quince jelly, jams and jellies.
